Chaya's Organic Slow-Roasted Beet Salad is Beetastic!

Imagine golden beets, red beets, and sweet orange slices sharing a bed of fresh arugula, topped with candied walnuts and decadent almond-crusted goat cheese: a beet lover's dream come true! I recently experienced the delightful Organic Slow-Roasted Beet Salad at Chaya Venice on Main Street and fell in love with the flavors and textures. 

Slow roasting beets creates a smooth texture with a hint of al dente. The beets in Chaya’s salad are earthy and sweet, and the balsamic dressing with a splash of citrus adds delicious flavor along with a subtle dash of freshly ground pepper. The flavorful beets are definitely a super star in this dish although the almond-crusted goat cheese is a close second. Crispy goat cheese adds the perfect creamy and crunchy compliment to the beets, sweet oranges, walnuts, and arugula. 

Beets are naturally sweet when timely harvested and cooked well; it is also important to develop beets' unique flavor while enhancing and blending their natural sweetness in salads. This beet salad is blended effortlessly! Adding arugula to the mix is a fantastic choice as it neutralizes the sweetness, and the rich green tones compliment the gorgeous red and golden beets. Chaya's Organic Slow-Roasted Beet Salad is definitely one that I will revisit in the future. In fact, my taste buds are craving the salad right now!
