SUPER BERRY AND BEET SMOOTHIE BOWL (VEGAN AND GF) RECIPE

INGREDIENTS (serves 2)

  • 1 cup frozen blueberries

  • 1 cup frozen strawberries

  • 1 cup frozen raw red beets, peeled and cubed

  • 1/2 frozen banana

  • handful of baby spinach

  • 1/4 cup almond or coconut milk

  • 1 tsp vanilla extract

  • 1 tablespoon almond butter

  • 1 scoop vanilla or unflavored dairy-free protein powder (We love Vega and Plantfusion)

  • maple syrup or sweetener of your choice, to taste (optional)

Toppings (optional)

  • coconut shreds/flakes

  • blueberries

  • strawberries

  • mint

  • hemp seeds

  • other berries, sliced and/or chopped

DIRECTIONS

  1. Blend all ingredients until smooth.

  2. To make the best smoothie bowls, use frozen ingredients and add minimal liquid, only enough to blend.

  3. Be patient. Keep blending, scraping down the sides of the blender until smoothie bowl consistency is smooth and thick.

  4. Top with your favorite toppings. The options are limitless. Enjoy!
