Red Velvet Beetroot Ice Cream (Vegan)

BEET ICE CREAM? Yes! This red velvet beetroot ice cream is delightfully chocolatey, deliciously tart, perfectly creamy, and naturally sweet. Plant-based, free of added sugars, and made with a blender, Red Velvet Beetroot Ice Cream is a family favorite.

I adore red velvet desserts, but so many red velvet recipes use artificial red coloring. This red velvet ice cream utilizes the beautiful vibrant red beet color to create a natural food coloring.

Did you know that you can make red velvet foods without artificial red food coloring? It’s amazing to see what fabulous “red” colors can be found in mother nature’s gorgeous fruits and veggies.

The combination of red beets, raspberries, and raw cacao create a natural red velvet color. Frozen bananas and a little coconut milk make this an absolutely decadent and scrumptious Nice cream-style dessert.

What is NICE CREAM?

NICE cream is a wonderful plant-based alternative to “ice cream” that utilizes frozen bananas and other fruits (rather than added sugars or sweeteners) and veggies to create a lusciously creamy healthy dessert. To make Nice Cream, usually pieces of frozen fruits are blitzed in a high-speed blender, like a Vitamix or a food processor. This type of whole-food vegan ice cream is so creamy, rich in flavors, and deliciously healthy.

Why add beets to dessert? Beetroot is super nutritious. It’s a great source of fiber, vitamins, antioxidants, and minerals. Adding raw beets to nice creams, smoothies, and vegan ice cream is a great way to enjoy raw beets and all their amazing health benefits.

There are two ways to include beets into this recipe:

One: use chopped raw frozen beets

Two: use organic cold-pressed beet powder (the color will vary as beet powder has a lighter hue than raw red beets)

Using raw beets is best, but when you don’t have time or are looking for an easy way to add more beets in your diet, beet powder is an excellent alternative.

This decadently delicious Red Velvet Beetroot Ice Cream is chocolatey with just the right amount of tartness and natural sweetness. You don't need an ice cream maker for this tasty NICE cream. Just grab your blender and voila! you have a healthy and scrumptious vegan ice cream with no artificial sweeteners or food coloring!

Ingredients

  • 2 bananas, frozen and peeled
  • 1-2 small red beets, washed and peeled (or 2 tsp beet powder)
  • 1 cup raspberries, frozen
  • 2 tbsp raw cacao powder (more for extra chocolate flavor)
  • 1/4 cup coconut milk
  • 1 date, for added sweetness (optional) or your preferred sweetener (like 2 tbsp maple syrup)
  • extra dark chocolate vegan protein powder or chocolate vegan protein powder (optional)
Toppings
  • cacao nibs, coconut shreds, fresh raspberries, fresh mint leaves, sunflower seeds, dark chocolate chips, and more. Topping

Instructions

  1. Wash and peel raw beets. Check out these 6 Easy Tips for Preparing Beets Without a Mess.
  2. In a high speed blender like a Vitamix, add all ingredients. Start on low speed and blend patiently pushing down the sides. Keep pushing down the sides and then increase the speed until ingredients are smooth and thick, like an ice cream.
  3. Scoop into bowls (we love using coconut bowls since they are shallow) and top with coconut, fresh fruit, dark chocolate chips, etc. or scoop into sealed containers and place in the freezer 1 to 2 hours for a firmer consistency. If this ice cream is frozen longer, a little room-temperature defrosting is necessary to make the NICE cream scoopable.
